When I was a freshman in college my father had a heart attack. This was in the late 1970’s

and bi-pass surgery was a new procedure. The only place in our area that you could have

the procedure performed was at the University hospital. This is a teaching hospital and so

there are many innovative procedures that are preformed there. The hospital receives

patients from all over the United States so there was a four month waiting list prior to dad’s surgery.

He was sent home with medication and a restricted diet. Suddenly my mother was looking for healthy recipes to cook. This was a great change for her because she used a great deal of butter and salt in her cooking,

and they ate out in restaurants a great deal. Neither one of my parents had ever given a thought about healthy recipes and fat or salt content in their foods.



The heart attack really frightened my mother.She was determined that dad would regain his strength and be healthier. She became a fanatic at making sure everything she served him was made from healthy recipes. At that time there was not the number of fat alternatives that there are today. The alternatives that were on the market were poor tasting and poor quality.



My older sister tried to tell my mother that she did not need to try elaborate healthy recipes, but instead broil chicken and fish and serve fresh vegetables. The most difficult thing for dad was giving up chocolate as well as the rich desserts that mom made. She made pound cakes that melted in your mouth. She would make several at a time and freeze them. When ever she needed a dessert she would thaw one of the cakes and serve large pieces with fresh whipped cream and chocolate sauce. We teased my dad that it was probably a piece of mom’s pound cake that clogged his artery.



During the four months of waiting for the surgery my parents gradually became accustom to their new life style. Mom did find some
healthy recipes that tasted quite good. She learned to cook simpler meals and they both learned to make wiser choices when eating out in restaurants. Dad had his surgery and needed to stay in the hospital for a month due to complications. After his hospital stay he had several weeks in a rehab hospital closer to home. Once he returned home he was able to resume most activities that he did prior to his heart attack. I have special Isan dish which Isan people(Thai) eat it and very delicious food.Butterfly Lizard is a small reptiles that some type live in northeastern part of Thai. Lizards are reptiles of the order Squamata, normally possessing four legs, external ear openings and movable eyelids


Butterfly Lizard Spicy Fried


Ingredients :


150 gms. Butterfly Lizard meat (Small chopped)
25 chopped small green and red fresh chillies
1 tsp. crushed garlic
1 tbsp crushed shallot
1/2 tsp. salt
1/4 tsp. ground black pepper
1 tbsp. fish sauce
1 tsp sugar
1/4 cup vegetable oil
1/4 cup water
30-40 Holy basil leaves


Mathod

1.Heat some oil in a wok

2.Add the butterfly lizard meat and stir fry until cooked, then add water.

3.Add garlic, shallot, chilies, sugar, salt ,sauce -stir , holy basil leaves and end with pepper -serve hot

Ingredients

1. Chicken meat ……………………500 g

2. turkey berry………………………500 g

3. coconut milk………………………400ml

4. green curry paste…………………..1 table spoon

5. fish sauce…………………………..2-3 table spoons or depend on your flavor style

6. sugar ……………………………….2-3 table spoons

7. chilli………………………………...optional



Method

1. Cut chicken meat look like a dice

2. Wash the turkey berry and split is 2pieces. Add coconut in a pot and boil

3. Add all ingredients and stir for 2-3- minute and teste a flavor

 Somtam is a Thai cuisine ,if you travel to Thailand you should be have a SomtamSomtam have many type sush as Thai, Laos,Korath, and more style.

Ingredients

1.Green papaya ..............................5 cups

2.garlic.............................................5 cloves garlic

3.Chilli..............................................5-6 pieces

4.fish sauce.......................................3 table spoons

5.dried shimp...................................¼ cup



6.sugar................................................1 table spoon

7.lime juice .......................................3 table spoons

8.Pra-ra(fermented mud fish)..........2-3 table spoons(optional)

Method


1.Peel the papaya and rinse with running water ,

then shred the papaya with a grater or a knife

2.Add a chilli, garlic to the mortar.Then add green papaya dried

shrimp, sugar, lime juice, fish sauce , pra-ra Mix all ingredients

by pound with a pestle(You can mix by anything that you have)

3.Test a flavor as you like

Ingredients

rice noodle..................................................... 7-8 ounces

egg ................................................................1-2 eggs

dried shrimp ...................................................1/4 cup

roasted peanuts.............................................. 1/2 cup

bean sprouts.................................................. 1/2 cup

tofu(diced and marinated in dark sweetsoy).... 1/2 cup

chives(chopped)............................................. 1/4 cup

tamarind juice .................................................2 tea spoons

(tamarind concentrate dilute in 5 tea spoons of water)

sugar............................................................. 1/4 cup

fish sauce....................................................... 1/4 cup

shallots(chopped)........................................... 2 table spoons

garlic ..............................................................5-6 cloves

chilli ................................................................up to you

lime juice......................................................... up to you



Method

1.You need to soaked rice noodle at water for an hour or soaked

untill soft noodle,then heat oil in a wok and add garlic and shallots,

stir untill changing color, at that time add all ingredients( except

egg, fish sauce and bean sprouts) and stir fry untill the noodle soften.

2.Maybe add 1-2 tea spoons of water. You need to stir continue.

Add an egg and dried shrimp.

3.Add fish sauce, lime juice , sugar,

chilli or something that you need for your favor , At last you can

serve garnish with bean sprouts.

mushroom................................................ 1/2 cup

galangal.................................................... 1/2 cup

lemongrass ................................................2 stalks

kaffir lime leaves ........................................5 leaves

prikpao(roasted chile in oil) ........................2 table spoon

fish sauce................................................... 4 table spoon(or more)

lime juice ....................................................4 table spoon

soup stock.................................................. 5 cups

fresh thai chile peppers ................................5-6 crushed



Method

1. Wash the shrimp and peeling shell. Add soup to a boiling.

2. You need to wait soup boiled,Then Add a galangal(sliced galangal),

mushroom, prikpao, kaffir lime leaves(sherded), lemongrass(lightly pounded and cut is a segments),

fresh thai chile peppers, lime juice and the shrimps.

3. Add fish sauce to suit your flavor.
